CUTTING CELERY SEEDS

Rustic selection from the Netherlands. Curled rough leaves and tender hollow stems are extraordinarily aromatic. Much less susceptible to Septoria than the standard Chinese cutting celery. Makes an excellent soup base. Fresh leaves may be used like parsley. Dried leaves and seeds contribute to a superior celery salt.

These seeds are best sown indoors in flats in very early spring. Press seeds into moist soil, barely dusting with additional soil or fine vermiculite. Mist generously and cover with plastic to maintain moisture. Kept moist at cool room temperature in bright indirect light, seeds will begin to germinate in 2-3 weeks. Avoid high temperatures, as they may delay or prevent germination. Thin to 2-3 seedlings per cell and grow on at room temperature in bright indirect light. Harden off and transplant outdoors around the date of the last frost.

This stout bushy celery is suitable for container culture. Use as you would any cut-and-come-again herb. Very nice in a lowball Bloody Mary.
