AJI PINEAPPLE PEPPER SEEDS

Incredibly prolific and delicious, these bright sunny yellow chiles from Peru resemble the ubiquitous Lemon Drop but are superior in nearly every respect. These peppers are hot, at least 20,000 SHU, but with a clean and fruity heat that lacks the sharpness and soapiness of Lemon Drop. They're early, especially for a baccatum, and peppers continue to ripen through light autumn frosts. And there are SO. MANY. PEPPERS. One plant will produce several dozen. Makes a great hot sauce. Amazing in tom kha gai. May also be dried and ground and used to great effect in a lemony aioli, egg salad and white chili.

Start these seeds at least 10 weeks before the average last frost: sow seeds just below soil surface, pressing to keep seed snug; mist generously with warm water; cover with plastic to maintain warmth and moisture; kept at 75°F in bright light these seeds will germinate within two or three weeks. Transplant seedlings to individual pots when first true leaves appear. Grow on at warm room temperature in bright light. Transplant outdoors into full sun well after the last frost. Protect young plants from cold temperatures. Mature plants can withstand light autumn frosts.
