DUCK POTATO SEEDS

Sagittaria latifolia

Wapato. Also known as Common Arrowhead. A favorite of foragers and ducks alike, this species is a hardy aquatic perennial that thrives in and around shallow freshwater. It forms tubers that can be harvested, peeled, and slow-roasted like new potatoes or camas bulbs. It is native to the Americas and considered invasive in Europe and Australia.

Seed typically requires stratification. Germination occurs around 70°F after 8 weeks of cold. Tubers are best worked up in pots for several months before being planted into the muck of natural ponds, although some growers have luck sowing the seeds directly into pondside soil and artificial water gardens in autumn.

This species will eventually spread aggressively by both rhizomes and self-seeding. It is an excellent candidate for the permacultural landscape. Tubers can often be harvested lightly in the second year.
