WINTER SAVORY SEEDS

Satureja montana

An extraordinarily hardy and sturdy perennial herb, this species will often stand through winter beneath snowcover. The fresh or dried leaves are fantastic for flavoring rich creamy turnip and potato gratins, as well as big pots of bean and split pea soup. Great for homesteaders that grow and dry their own herbs.

Very fragrant and attractive little shrublets. Bees love the flowers. Deerproof. Drought-tolerant. This selection is especially rich in carvacrol and suitable for growers with small stills.

Start seeds indoors in late winter. Press seeds into moist soil and just barely dust with fine vermiculite. Mist carefully and cover with plastic to maintain moisture. Kept moist in bright light at room temperature seeds will germinate within two weeks or so. Prick out seedlings to grow on in individual pots or cells in bright light at warm room temperature once they have true leaves. Harden off and transplant well-rooted little plants into well-drained soil in full sun around the date of the last frost. Water just until established.

Hardy to zone 5 at least, and probably much of zone 4. Drainage is key. Plants will not tolerate wet clay soils.
